As I sit here typing, I’m thinking back to the other night when my kids enjoyed breakfast for dinner – a beloved favorite. Eggs and bacon are staples, but what we pair with them changes. Toast? Bagels? Pancakes? Perhaps.
The other night I was running low on pantry items, and I had a handful of potatoes left from our recent CSA delivery. Three potatoes can stretch a mile if you prepare them properly, and with other CSA goodies like peppers and garlic, I had the perfect accompaniment.
Add the bacon to a large skillet and cook over medium heat for 10 minutes, taking care to flip the bacon every 2 minutes. Bacon is done when it’s light brown and crispy. Remove to a paper towel to cool, then crumble it. Set aside.
Add the potatoes to the skillet, increase heat to medium-high and cook for 5 minutes, stirring occasionally. Add the peppers and onions, and continue cooking for another 5 minutes. Add the garlic, salt, pepper, parsley, and the crumbled bacon. Cook and stir for 2 more minutes – and if potatoes are “fork tender,” then they’re done!
Serve hot with breakfast, or as a side with dinner!
