If you keep your pantry stocked with a few basic baking necessities, whipping up a dessert last minute can be a breeze. The other day we had a last minute invitation to a friend’s barbecue, and I had to quickly decide what to bring – even though we were told not to bring “anything but yourselves.”
We all know that friends are just being nice when they say that. They do want and appreciate when you come with your hands full, whether it’s a bottle of wine or a fresh baked dessert.
This is my current easy-to-make-dessert-so-it’s-my-goto-thing-to-bring, that is if I’m able to keep my kids away from the cookie jar long enough to get them to their destination. Lemon, carrot cake, or just plain chocolate, you can’t go wrong with cake cookies.
And, they’re just so stinkin’ easy to make, it’s ridiculous.
Preheat the oven to 350°F.
Put all the ingredients into a medium mixing bowl, and use a wooden spoon to stir until just combined.
Drop by rounded teaspoonfuls onto cookie sheets and bake for 15 minutes, or until the edges are golden.
Remove from the oven and let cool for 1 minute before transferring the cookies to a wire rack to finish cooling.
