2 Easy, No-Sugar-Added Holiday Desserts
Fifteen years ago, I was diagnosed with insulin-dependent diabetes just before the holiday season. After crying, gnashing my teeth and feeling sorry for myself I set about the work of finding some holiday recipes that would satisfy my sweet-tooth without sending my blood glucose levels soaring to new heights like Santa’s sleigh.
After a few failed attempts (one of which included a horrific experience with some brownies made primarily of black beans), here are two of my favorite recipes that are easy to make and satisfying to even the choosiest dads. I am asked over and over again to bring these to holiday gatherings.

No Sugar Added Chocolate Mousse
Ingredients:
Heavy Whipping Cream
No Sugar Added Chocolate Nesquik®
Directions:
Very simply: In a mixing bowl mix heavy whipping cream and then while beating to firm peaks, add no sugar added Chocolate Nesquik® to taste.
For an extra treat, top with crushed nuts, some of the Nesquik® powder or even some Splenda®/cinnamon mixed together.

No Sugar Added Punkin’ Whip
Ingredients
1 15 oz can of pumpkin
2 cups of Splenda®
1 Tablespoon of Cinnamon
2 Tablespoons of Vanilla
1 teaspoon of Pumpkin Pie Spice
1 8 oz package of cream cheese
1 pint of heavy whipping cream
1 ½ cups chopped pecans (optional)
Directions
Mix all ingredients except cream in mixer on medium. Combine thoroughly. Once mixed well, very slowly add whipping cream while mixing. Mix until the consistency of thick whipped cream. Chill until ready to serve.
Top with chopped pecans if desired.
